This Easter, I missed out on our holiday dinner with my relatives for the first time while my husband and I were still in France as his hockey season wrapped up. Family holidays have at least one long-standing tradition- seeing how fast everyone eats my aunt’s famous deviled eggs. Since I missed out, I came up with a curry flavor twist on traditional deviled eggs (which I promptly gobbled up)!
The recipe ingredients are clean and it’s so simple to make.
- Boil eggs. Remove shells. Unlike my pictures (I never quite listen fully to instruction, even my own, apparently), cut lengthwise. Remove egg white from yolk.
- In mixing bowl, mash yolks, then fold in mayonnaise, minced green onion and cilantro, curry, apple cider vinegar, lime, and season with optional salt/pepper.
- Using a melon baller or spoon, scoop deviled egg mix out and fill egg whites.
- Serve immediately, or refrigerate and serve within 8 hours. Garnish with cilantro.
Additional alterations include adding 1/2 stalk minced celery to deviled egg mix, or garnishing with currants.

NOTES ON INGREDIENTS/PREPARATION
Cilantro and green onion were in season in the garden, so that saved a trip to the grocery store!
Don’t mind the little weed popping up by the green onion. What’s the saying? A weed is just a plant out of place.
I planned to use “curry” from an herb box on my porch, but I learned (after a quick google search) that the curry plant isn’t curry at all. It’s helichrysum italicum, and commonly called curry plant due to its curry-like aroma. Oh well, I’ll find another use for that another post.
Instead of regular mayonnaise, I used coconut oil mayo (the flavor went perfectly with the Indian spiced-ingredients). I filled my mom in on *Chosen Foods coconut oil mayo, but she was already using it before me! So ahead of the curve:) My mom said it went great in her salads and salmon dip.

Curry cilantro deviled eggs
- 6 large hard-boiled eggs
- 1/4 cup coconut oil mayonnaise
- 1 tablespoon minced green onion
- 1 tablespoon minced cilantro
- 3/4 teaspoon curry
- 1/2 teaspoon apple cider vinegar
- 1/8 lime slice (squeezed)
